Jerky Fried Rice

We love to cook together and Fried Rice is a favorite of our youngest son.  We hope you enjoy this as much as us. 

Ingredients:

Rice made from 2 cups of uncooked rice

½ T Butter

3 Eggs beaten

1 T Vegetable Oil or Butter

½ Cup Diced Onion

3 Minced Garlic Cloves

¾ Cup Diced Carrot

¾ Cup Frozen Peas

2 T Soy Sauce (to Taste)

80 grams Chopped Jerky

1 T Oyster Sauce (optional)

4 Green Onions Chopped

1 t Sesame Oil

 

Cook rice according to package directions. Rice works better cold so leftovers are better or I cook it in the morning or the night before and pop it in the fridge.

Melt butter in pan and scramble eggs. When cooked remove and put aside.

Add ½ oil or butter and veggies sauté until tender. Add the remaining oil or butter, rice and sauce and jerky. Sauté for about 3 minutes stirring every 20-30 seconds rice and veggies should be browning a bit. Remove from heat and add eggs green onions and sesame oil. Stir to combine. Give it a taste you can add more soy sauce if you would like. Enjoy!
